For the production of this wine, the pride of the Umbrian land, 100% Sagrantino grapes are used, obtained from selected bunches of the vineyards owned by the Tudernum Winery.
The skins are left to macerate for 18/22 days, after which it is time for racking, in which the free-run wine is separated from the marc (exhausted skins).
To give greater harmony and roundness to the wine, it is placed in French oak barriques where it will be left to refine for at least 1 year. The overall refinement, therefore, also considering that in the bottle, lasts at least 33 months.
The result is a very intense wine both in the nose and in the mouth.
Due to its organoleptic characteristics, it is recommended to pair it with very structured and spicy dishes such as game meat or very mature and spicy cheeses.
