Second degree stone processing: the raw rice, or paddy, after being stored in the silos for about 60 days, enters the rice mill. After various processing phases, the brown rice undergoes only 2 passes inside the Minghetti “Hamburg” type conical whiteners. Thanks to this old processing method, the rice is only caressed, keeping all its organoleptic and nutritional properties intact.
Native rice, the large pearly grain increases in volume during cooking, making this variety ideal for well-creamed risottos.
